In addition, banana pancake recipe gives you an innovative method for tricking your little ones into eating fruit. Furthermore, by adding a few chocolate chips to the mix, you are adding some extra sweetness and are sure to create a crowd pleaser. Banana chocolate chip pancakes are a delicious, no fuss, easy to prepare way to get you and your family's day started right!

Banana pancake recipe ingredients:

2 eggs
2 cups of flour
1/3 cup vegetable oil
1 1/2 cups 2% milk-You can also use whole milk, 1% or skim milk
1/2 cup mashed banana
1 tablespoon sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 cup mini semi-sweet chocolate chips

Instructions:

Spray your pan or skillet with a non-stick cooking spray or butter.

Heat your pan or skillet on medium heat for about 2 minutes.

Beat the eggs in a medium mixing bowl with an electric mixer on medium speed for one minute.

Add and mix in flour, vegetable oil, milk, banana, sugar, baking powder, and salt.

Do not add chocolate chips at this time. Mix until smooth, and then stir in chocolate chips.

Pour about one half cup batter onto center of skillet.

Cook until the edges become golden and the bubbles begin to break. This is normally about 30 seconds to one minute.

Flip the pancake and cook on the other side for the same amount of time.

This recipe makes about eight 6 inch pancakes.

This recipe can be modified for flavor. If you wish for more of a banana taste add another half cup of mashed banana. If you want less chocolate, only add 1/4 cup chocolate chips. The ratio of banana to chocolate chips can be increased or decreased based on your liking. Furthermore, the chocolate chips can be eliminated completely if you only want banana pancakes. In addition, if you would like more pancakes, only pour 1/4 cup batter onto the skillet. This will make smaller pancakes, while increasing the quantity. Also, adding some light whipped cream and placing a tablespoon of fresh chopped banana on top will add a little calcium, an extra bit of fruit, and a tasty addition to your morning cakes. Syrup and butter are always favorite additions as well.

Lastly, enjoy your delicious banana chocolate chip pancakes. Happy cooking!

Great recipe! I had to make modifications due to my partners dietary restrictions; 1 for 1 of white rice flour instead of flour, and substation of coconut milk for dairy milk. I have found out (by trial and error) more milk alternatives require extra fluid to get to the desired consistence. My partner raved about the pancake - his told me I can throw out all other recipes I have, and only make this one.
